Lunch-time Pasta Salad

For lunch this week, we turned to a tried and true: pasta! I mixed tortellini with grape tomatoes, mozzarella cheese balls and pesto sauce. I was sure it would be a hit... no luck. "This cheese tastes weird". I guess they prefer their usual gluten-free quinoa pasta! If your kids aren't crazy, pasta salads make an excellent lunch.

Lunch-time Pasta Salad
  • Leftover pasta (elbow macaroni, rotini, shells, ziti, orzo etc.)
  • Protein (thawed frozen turkey meatballs (diced), leftover cubed chicken or beef or mozzarella cheese)
  • Vegetable (grape tomatoes, cooked peas or zucchini, diced carrots, celery or cucumber, broccoli)
  • Sauce (pesto or a combination of oil, vinegar and mayo)
 Combine pasta, protein, vegetable and sauce in a bowl and serve!
