Bean and Cheese Burritos

This week I decided to try burritos. I was a little worried since the kids don't usually like any of their foods touching, but I am grasping at straws here on the inspiration. I had some whole wheat tortillas, so I made up some Uncle Ben's Quick Cooking Brown Rice (it takes 35 minutes instead of an hour). I put a dash of olive oil, salt and about a teaspoon of taco seasoning in the water as it cooked. Meanwhile, I heated up a can of kidney beans in a little water, and chopped up some tomatoes and cucumber for the side. When the rice was done, I was ready to assemble:

  • First, I warmed the tortilla in the microwave for 10 seconds
  • Then I put about 1/3 of a cup of rice in a strip on the tortilla
  • I added about 1/4 cup of beans and 2 Tbsp of shredded colby cheese
  • Next I was ready to roll... I folded the edges in slightly and rolled the burrito up as tightly as I could:
  • Once I had the burrito rolled, I wrapped in in aluminum foil and cut it in half
My idea (inspired by burrito stands everywhere) is that the kids could peel the aluminum foil down from the cut side as they were eating.

For the tomato salad, I added a dash of raw apple cider vinegar, olive oil and salt and it was ready to go (it didn't hurt that it was a batch of fresh tomatoes from the garden)
