The Picnic Lunch (aka Homemade Lunchables)

We are trying picnic lunches this week. I love picnic lunches because they are just about the easiest lunch you can think of! Throw some cheese and crackers in a box with some sliced veggies and you are good to go, or try a container of nut butter with some sliced apples and pretzel sticks. Kids love them too. In fact, this type of lunch is the basis for most of the lunchables I have seen. Lunchables are full of processed foods, preservatives and sodium, but it is so easy to make your own!

You can do an easy picnic with sliced vegetables, cheese and crackers, or make it fancier by adding cold cuts and putting the vegetables on skewers. You can try a hummus, ranch dressing, or nut butter dip. No matter how you do it, the picnic lunch is always a hit.

Picnic ideas:

  • Sliced vegetables: carrots, cucumber, peppers, celery, tomatoes, snap peas, pickles or olives
  • Sliced fruits: grapes, apples, strawberries, kiwi, melon, peaches, orange slices or sliced banana
  • Protein: sliced cheese, nitrate-free cold cuts, nut butter, hummus, hard-boiled egg, tuna salad or chicken salad
  • Whole grain crackers or crusty bread
