Chicken and spinach pocket pies

I decided to try a healthier variation of these Ham and Cheese Pockets. I was hoping to find more options at the grocery store for whole grain rolls or bread dough, but all I could find was whole wheat pizza dough. It worked out wonderfully though!

Lunch pockets
  • 1 pkg whole wheat pizza dough
  • 1/2 10 oz. pkg frozen chopped spinach
  • 6 oz. cooked chicken sausage (2 large links)
  • 1/2 cup tomato sauce
  • 1/2 cup mozzarella cheese

  1. Take the pizza dough out of the package and let it warm up for about an hour.
  2. While it is warming up, make the filling: Microwave or heat the spinach on the stove until thawed. Press out the excess water with a paper towel. Then chop the chicken sausage into small cubes and add to the spinach. Add in tomato sauce and cheese.
  3. Flour the counter and roll the pizza dough out flat. Cut it into 6 pieces, and add about 1/2 cup of filling to the middle of each piece. Fold the ends together and pinch the edges shut.
  4. Let rest for about 30 minutes
  5. Then brush with a beaten egg and put in the oven at 375 degrees for 20 minutes.
They came out great and the kids loved them. What a great way to get them to eat spinach! (You could always leave the spinach out if you think your kids won't eat them though)
